Ms. Ng's Famous Apple Salad


If you have attended a potluck with my mom, you are aware of her famous apple mayo salad.  It is absolutely delicious, and you can never just have one serving.  As her lucky daughter, I always get to sneak some for myself before she brings it to her parties.

Recently my mom attended a house-warming potluck party with her line-dancing friends and she decided to make her famous salad.  I took this opportunity to learn the steps and ingredients.  It was so fun to assist her! 

On another note, I have actually collected a few other dishes by my mom, but haven't posted here.  I am happy to say that Ms. Ng is actually getting used to me taking pictures of her and her dishes.

Now let’s learn how to make this simple dish!

Ingredients:
  • 3 Large Apples
  • 2 Potatoes
  • 1 Stalk of Celery
  • 1/2 pound of Shrimp
  • 3 Boiled Eggs
  • ½ Lemon
  • Salt (to taste)
  • 1 regular size jar of mayonnaise (but we will only use a little bit more than half)

The first thing you should do is prepare your ingredients:


Potatoes: Boil and peel your potatoes.  Peel off their skin and then cut them in to small cubes. 

Celery: Wash, peel the strings, and chop celery into small cube pieces. 

Shrimp: Boil water, throw the shrimp into the boiling water until they turn red and curl.  Once the color darkens and the shrimp begin to curl, remove them from the hot water immediately.  Let cool and dry them (if you don't dry them, it will turn your salad watery). Peel off the shells, remove the black line of intestines and the heads.  Cut them in to small pieces.


Eggs: Boil eggs and remove the shell.  Slice eggs:


Apples:
Prepare your apples only when you are ready to start mixing
You will need to immediately mix the mayonnaise with the apples to avoid the apples from turning brown. Skin apples and cut them in to small cubes.  Immediately put them in your mixing bowl (or use a giant wok like Ms. Ng).  Add mayo and begin mixing the mayo and apples together.  Again, make sure that all the apples are coated with mayonnaise to avoid them from turning brown.



Now you are ready to mix in the potatoes, celery, and shrimps.  Add additional mayonnaise as needed.  Continue mixing until all ingredients are covered in mayo:





Add salt to taste:


Add lemon juice by squeezing lemon over mixed salad: 


Next, put the salad in your serving bowl:


Finally, place your sliced eggs on top for presentation points:

Keep refrigerated for a few hours before serving. This dish should be served cold, and is great for the spring and summer months!  It is so refreshing. Enjoy!
